NE uses the .375 as the start of "big bores" merely because a lot of hunters think of it that way and use it as a "big bore" on safari.
IMO "big bore" starts the .450 and above, and that was once a widely held definition for a long period of time, when NE cartridges "ruled" big game hunting fields. But there was a period when a non-bore cartridge was a medium or small bore too. Times and definitions change.
