Ostrich is very good if fresh. It is great marinated and grilled. The flesh is nice and red just like steak for those who have never tried it. Gator or crock is ok but I have always needled it. Sometimes you can find a butcher with a needling machine. This pokes about a zillion holes in the flesh and tenderizes it.Cabelas carry's hand needlers which would work at home. I like it best spicy and fried but it also is great blackend. Croc bites !
Next time on your ostrich try 2 parts olive oil, 1 part best grade (Kikoman natural low sodium...Green lid ! ) soy sauce, Pinch of sea salt. A few turns fresh ground black pepper and a few cloves of crushed garlic. Blend it and marinate the steaks before you grill em. I usually start this with 1/2 cup olive oil, 1/4 cup soy.
