Let me asure you that in Africa nothing, but nothing goes to waste! Depending on the area hunted, the game belongs to the landowner, conservancy inhabitants or local tribes. Some of the game is used in camp to feed the clients and staff, some is taken to the local butchery and sold in the stores just as we slaughter and sell beef, pork and chicken, while in some areas the members of the local tribes help themselves to the meat. When an elephant is shot, within a few hours every bit of meat is on its way back to the local village. The locals just show up and butcher it themselves. I once had a tracker in Namibia ask if he could have the stomach from a Gemsbok I had just killed. He considered it a delicacy. I hope this puts your mind at ease.
