Airlines allow a maximum of 5 Kgs of ammo per passenger and it has to be packed in the manufacturers packaging or in those plastic containers that holds each round seperately.

If importing firearms into RSA you are allowed a maximum of 200 rounds of ammo per calibre and you are not allowed to bring in any more than 1 rifle of each calibre......there's an awful ot more to the regulations than that but you're outfitter should be telling you all this........he should also be making appropriate arrangements for the correct import of your firearms.....

If he's leaving you to your own devices it probably means you've booked with a less than reputable company.
