The worst thing I had was some Impala meat that was over done. It had been cooked prior to returning to camp as I was out late hunting bush pig. Nothing worse than dry, overcooked meat. I was REALLY hungry that night too as it was about 10 pm and had been hunting hard all day. I am happy with any tenderloin meat, hard to beat when done right and that's cooked rare to medium rare. I bet even a tough old buffalo bull has good tenderloins. I do not care for "neck" of anything, I find neck meat to be rather tough. I grind it on my deer and certainly don't find it apealing as a steak cut. |
