Gryphon As messmate said, the meat is fine. The hide has a waxy oily coating which is quite water repellent and if it gets on the meat, the meat is spoiled. The outfitter I used in 2002 shampooed and washed the waterbuck carcase in camp before skinning. He said that after this the meat would be fine. Other outfitters might for example have their staff take care with skinning in the field if camp is not accessible to also keep the meat edible. Same for stags in rut, or not touching the glands on stags and then touching the meat. Different reasons but same result. |
