I paint them in grey undercoat mainly because it lets me see the little imperfections easier compared to the multi colours you get with the various fillers and bogs etc. used to get the desired shape.
Using old damaged stocks lets me play with the shapes without destroying a good piece of wood, you can add or remove as much as you like, then by having the blank cut slightly oversize, you stil have plenty of wood left for adjustments.
