Rub the shine off of it with OO steel wool, then hand rub in a couple of coats of TruOil, building it till it starts to shine again. Finish up with a wet sanding of fine wet/dry paper flooded with oil to get rid of the shine. Wipe off the excess oil and hand buff it with a soft towel. Done, a perfect subdued oil finish.
