You can quite easly bring rifles and ammo into Australia - it's just paperwork that needs
filling out and maing sure your flight avoids all of the horrow countries.

You need to fill out and have issed a B709A Authority to Import which will list
all of your guns (MAKE SURE you get the Serial Numbers correct) + all of
the ammunition.

On exit you will also need to have CUSTOMS paperwork filled out for the export of the firearms.

Their may be some other requirements for certain states in Australia but
Your outfitter should be able to help you on all of this.
