I am planning to make some recipe dishes specifically of Vietnamese, Cambodian, Thai and other SE Asians cuisine plus South Asian ie Indian and Sri Lankan cuisine from the sambar venison. From the regions where the sambar originated from.

Same with some water buffalo meat brought back from the Top End.
