Looks like "Roo tail soup" could be a new delicacy. Bet they're tough as shoe leather though.
Kangaroo cooked correctly is beautiful (as long as it's not an old buck !!!).
A steak cooked badly tastes feels like leather but so does any other meat !
Stews are always good.
