It is my understanding that pork almost everywhere is subject to trichinosis. The only exception of which I am aware is prosciutto crudo, the raw ham produced in Italy. For this product, the hogs are raised in carefully controlled conditions. Trichinosis may be encountered from eating other under-cooked meats, particularly wild meats. Bear meat is especially likely to contain the parasite that is responsible for trichinosis.
Is there some other problem with wild pork that occurs in your area?
