Very interesting mate,to hear that from S.A., the fallow season (stags) finished in Tassie end of March this year and the doe/hind season starts in May through to June, missed out on the stag season this year due to work but will be going down too Tassie for May. Got a Tassie mate who's son is a butcher and makes the best venison kabana this side of the black stump, last year up on the Sambar we had many a night around the camp fire with a beer or port (sorry we had Brown Bros) and a stick of venison kabana in hand, doing the same this year but this time I'm taking them to my bit of bush I reckon that will sort them out, told them it's going to be hard yakka so I hear they are in training hahaha, little do they know that the Sambar are close by, and it's their shout.....take it easy...Les
