My experience with true wild boar, Sus scrofa, is the meat is more gamey and was actually quite red (?), rather than white meat like pork. Also the texture was more solid. It was quite different.

I wasn't involved with the butchering of a boar though. Perhaps the meat was marinaded for the colour?

Perhaps one of our European or American Sus Scrofa hunters can provide some info?
