Back when I was trapping a lot I trimmed up some of the younger ones and tried the meat. The texture was similar to beef I thought (we very, very rarely eat beef though, so I may be off there) or bear. The flavor was fine, used it for a pepper steak and it was good as any other meat we used (deer, elk etc.) Like most game I just made sure all the fat, membrane and such was trimmed off, too you always hear about beaver tail, the ones I've skinned were just fat and cartilage, never saw a point in eating that kind of thing.

Spot-on regards the tail. I've eaten beaver ribs, roasted on a willow rack against a fire - delicious.
The leg and back meat, de-boned and made into a stew with celery, carrots and potatoes, also delicious.
As far as I am concerned, the tail is inedible - all gristle and fat from what I saw.

Beaver is great, have had it many times. Have been trapping them for decades. Best to stick with the younger ones, but the older ones are good as well, just make sure they are trimmed up more with regards to gristle and tendons in the bigger cuts. I also make sure every last bit of fat is trimmed off of beaver and I generally only eat the ones that came from places I am trapping with moving/running water in the system, not isolated, really muddy ponds.
