Mike's Chili Recipe

Mike’s Chili Ingredients List

I cook this in LARGE batches, so I use a 26 quart, tall pot. I spray the inside with PAM Olive Oil Spray. Brown the ground meat 1st, then lower the heat to midway between low and medium, for a slow simmer of around 4 – 4 ˝ hours. Partially cover the pot to prevent splattering…..uncover the pot after 3 hours to let some moisture evaporate and thicken the broth. I use a wooden stirring paddle and stir every 15 – 20 minutes. Freezes very well

6 – 6 1/2lbs. ground beef (or ˝ beef….1/2 venison)
1 ˝ - 2 huge onions (chopped coarsely)
4 long, green hot peppers (seeds removed & chopped)these are hot.
5 jalapeno peppers (seeds removed & chopped)these are medium hot.
1 or 2 poblano pepper (chopped)these are mild.
4 Serano peppers chopped..these are hot.
2 6lb. 12oz. cans of kidney beans, 2 2lb cans
2 6lb. 6oz. cans of tomatoes, whole, large, chopped

Use the following spices according to your own taste. Follow the golden rule of cooking....taste it, taste it, and taste it again. You can always add more, but, you can't take it out...Salt, Black Pepper, Dried Red Peppers, Mexican Chili Powder, Ground Cumin, Chipotle Powder, Chipotle Hot Sauce, Sriracha Sauce, St. Lucifer Habanero Blend Powder, Worcestershire sauce, Sweet Baby Rays Honey Barbeque Sauce

Mike, you must be a Legend to eat that; I'll quietly pass on your 'chilli' thanks!
Just reading it my lips when numb, I started sweating, my guts was churning & Johnny Cash's song "Ring of Fire" was pounding in my head.............sorry mate - she's all yours!
Sounds like a good 'paint stripper' formula for anyone's Loo that's game enough to try!

Mike, I am lover of hot spicy food and can handle such without any problems but your recipe sounds like a cattle killer. You would have to have balls of steel to eat it I believe. I am impressed.

I'll eat some with you one day mate.

Big pot, about 13 chillies, so not that many. Plus unknown quantities of other chillie powder and other spices, sauces etc.

What do you eat it with?

Guys.....honestly. Don't run away.....these are just the ingredients.....the majority of the heat comes from the spices and seasonings.....I don't list how much of each goes into the chili, because each lot is different in strength.....so....when you start to add them, start with a little bit....a tablespoon or so of the powders, and 2 or 3 splashes of the liquids.....after it's been cooking a half hour or so, taste it.....see what it needs.....remember: you can always add more, but, if you bugger it up by adding too much, you can't take it out....go easy and take your time.

I eat it with a soup spoon.
I top it with a combination of shredded Mexican 5 cheese blend, and stir it in. Sometimes I'll make some rice and pour the chili over top....other times, I'll drain it well, and roll it up in soft taco shells.

I also make some sweet cornbread to serve with it.

This sounds a lot like Chilli con Carne, which I suppose it is. Meat, Beans and Chilli, tomatoes etc.

I usually like to eat Chilli Con Carne (chilli with meat) with rice, perhaps a fresh simple salad, or mashed or steamed potatoes.

I love cheddar cheese so have it with a lot of meals as well. As a side dish.

You're right...it actually is Chili Con Carne....we just always called it chili, at home.
