Curried Game Birds

Hello all,

I thought you might enjoy this gamebird recipe that I fix in camp for the clients. It goes as follows:

2lbs birds(birds with lighter meat work best)
1 hot fresh chili pepper
1 3" square of fresh coconut(packaged stuff will work)
1tsp cayenne pepper
1 pinch of tumeric
couple of cloves of fresh crushed garlic
1tsp fresh grated then crushed ginger
salt to taste(can't live without this stuff)
quarter cup of butter
quarter cup of olive oil(or other if you prefer)
2 medium dry red onions chopped
1 cup of plain yogurt(sour cream will work also)
juice of half of a lemon(fresh)
1 thinly sliced lime





Grind the chili peppers and coconut together. Add to this the cayenne, tumeric, garlic, ginger, and salt. Combine the butter and oil and bring it to a low heat. Sautee the onions until soft. Remove the onions and save the butter/oil. Put your birds(cut up) in a large bowl and add the spice mixture, onions, yogurt, and lemon juice. Mix well and allow the birds to marinate for at least an hour although marinating longer is better. Pour the contents of the bowl into a seasoned, cast iron Dutch oven and cover the mixture with the fresh lime slices. Bake at 350 degrees for an hour and a half or until the birds are tender. In camp, of course, I use the fire and coals from the fire but it works fine in an oven and you can substitute a cover baking dish for the Dutch oven. Serve with rice or egg noodles, and a good cold beer or nice wine. Pretty good stuff. One other note on marinating the bird pieces is that, most days, I'll fix this in the mornings and allow it to marinate all day. I think you'll like it.
